I was inspired last night to make homemade veggie pizza. I call it veggie pizza because there are lots of vegetables; however, I did add some sweet Italian sausage into the mix. This was quick and easy to make using a pre-made Freschetta thin crust drizzled with a small amount of olive oil. Sauté zucchini, yellow squash, carrots, onions and red peppers with the Italian sausage and pile onto the crust. Finally, top off with some low-fat shredded mozzarella. Delizioso!
